Valpolicella in Bottiglia

Valpolicella Classico

Controlled designation of origin

Grapes: Corvina, Rondinella, Corvinone, Molinara.
Vinification:  fermentation takes place in stainless steel tanks followed by aging in the same tanks.
Characteristics:  sapid red vintage wine with fresh bouquet.
Alcohol content: 12%  by volume.
Service:  serve at a temperature of 18°.
Format: 0.75 liter Burgundy bottle.

Valpolicella Classico Superiore

Controlled designation of origin

Vinification: grapes undergo short drying prior to being crushed, about one month in order to improve the organoleptic properties of the wine.  Fermentation takes place in stainless steel tanks and aging for 18/24 months in oak barrels, followed by another 6 months of aging in the bottle.
Characteristics:  a red color tending to garnet with intense bouquet enhanced by aging in oak barrels.
Alcohol content: 13%  by volume.
Service:  decant for at least one hour and serve at a temperature of 18°.
Format: 0.75 liter Burgundy bottle.

Valpolicella Ripasso Classico Superiore

Controlled designation of origin

Grapes: Corvina, Rondinella, Corvinone and Molinara.
Vinification: grapes undergo short drying prior to being crushed, about one month in order to improve the organoleptic properties of the wine.  Fermentation takes place in stainless steel tanks.
The wine is then “repassed” over the pomace used to produce the Amarone, where fermentation continues for 5/7 days.  Then it is placed to age in oak barrels for another 18/24 months; aging continues in the bottle for 6 months.
Characteristics:  intense color and aromatic bouquet, enhanced by the “ripasso” technique and by short drying.
Alcohol content: 14.5%  by volume.
Service:  decant for at least one hour and serve at a temperature of 18°.
Format: 0.75 liter and 1.50 liter Burgundy bottle.



Recioto della Valpolicella

Grapes: Corvina, Corvinone, Rondinella and Molinara.
Vinification:  fermentation takes place after a drying process on racks until February, followed by aging in stainless steel tanks.  Aging continues in the bottle for 6/12 months.
Characteristics:  an important wine with a strong garnet-red color, soft and velvet-smooth flavor.
Alcohol content: 14%  by volume.
Service:  serve at a temperature of 18°.
Format: 0.75 liter Burgundy bottle.

Amarone della Valpolicella

Controlled and guaranteed designation of origin

Grapes: Corvina, Corvinone, Rondinella and Molinara.
Vinification:  grapes undergo a drying process on racks and in crates until February, losing 40% of their water content.  We obtain a most full-bodied wine that gives off a wealth of fragrance.  Fermentation takes place for 30-40 days in stainless steel tanks.  Aging in oak barrels for 36 months.  Aging continues in the bottle for 6/12 months.
Characteristics:  a wine with an unmistakable intense and dry flavor, garnet-red color and strong bouquet.
Alcohol content: 15%  by volume.
Service:  decant for at least one hour and serve at a temperature of 18°.

Format: 0.75 liter and 1.50 liter Burgundy bottle.

Amarone della Valpolicella Classico Riserva

Controlled and guaranteed designation of origin

Uvaggio: Corvina, Corvinone, Rondinella e Molinara.
Vinificazione: le uve subiscono un processo di appassimento su graticci e in cassette no a febbraio durante il quale perdono il 40% dell’acqua. Si ottiene così un vino molto corposo e ricco di profumi. La fermentazione avviene in serbatoi di acciaio inox per 30-40 giorni. Anamento in botti di rovere per 36 mesi. Ulteriore anamento in bottiglia per 6/12 mesi.
Caratteristiche: vino dall’inconfondibile sapore intenso e secco, dal colore rosso granato e dai profumi decisi.
Gradazione: 15% Vol.
Servizio: lasciar decantare per almeno un’ora e servire ad una temperatura di 18°.
Fomato: Borgognotta da 0.75 l. e da 1.50 l.
